Far from the bayous of Acadia, we traveled outward to Spain, specifically the region of Catalonia. Nestled along the border with France, stretching southward to the Mediterranean Catalonia is famous for pigs and fish. It's also famous for mushrooms, such as truffles and morels, but sadly it wasn't that time of year.Pa Amb Tomáquet
The staple of Catalonia needs no recipe, for it is coarse bread, toasted and grated with overripe roma tomato, drizzled with olive oil and with just a pinch of salt. A deliciously simple dish, it's definitely worth trying yourself.
